Problems on this page:

Smearing or mushy mince

Hits OEE: Quality

Symptoms: The mince looks smeared or pasty instead of a clean cut.

Knife or plate dull
Sharpen or replace the knife and plate together as a set.
Product too warm
Keep the meat temperature in the range the product needs.
Cutting set not tight enough
Set the tension on the cutting set as the maker describes.
Feed screw running too fast for the plate
Reduce the feed rate for small plate holes.

Prevention: Cutting set sharpening on a fixed schedule, logged by set.

Bone or gristle in the mince

Hits OEE: Quality

Symptoms: Bone chips or gristle are found in the finished product.

Bone separation system not working
Check the separation plate and its discharge.
Plate hole size wrong for the product
Use the plate specified for the product.
Worn knife letting gristle through
Replace the knife.

Prevention: Bone checks on samples at the frequency your quality plan sets.

Throughput falling

Hits OEE: Performance

Symptoms: The grinder takes longer to process the same batch.

Worn feed screw or barrel
Measure the clearance and replace worn parts.
Frozen blocks bridging in the hopper
Temper frozen blocks or use a pre-breaker.
Dull cutting set
Sharpen or replace the set.

Prevention: Batch time tracked so a slowdown is noticed.

Motor overload or trips

Hits OEE: Availability

Symptoms: The drive trips or the motor labours on start or under load.

Product too hard or frozen
Temper the product before grinding.
Cutting set too tight or jammed
Reset the set and clear any blockage.
Bearing or gearbox fault
Check the bearings and the gearbox oil.

Prevention: Motor current trended on the grinder.

Product temperature rising in the grinder

Hits OEE: Quality

Symptoms: The meat leaves the grinder warmer than it went in.

Dull knives tearing instead of cutting
Sharpen the cutting set.
Product recirculating in the barrel
Check the screw and barrel clearance.
Cutting set too tight
Reset the tension.

Prevention: Product temperature checked before and after the grinder.

Cutting set wearing quickly

Hits OEE: Availability

Symptoms: Knives and plates need replacing far more often than usual.

Running the grinder empty
Stop the grinder when the hopper runs empty, so metal does not rub on metal.
Knife and plate not matched
Keep knives and plates as matched pairs.
Grit or bone in the product
Check the raw material.

Prevention: Cutting sets numbered and their life tracked.

Product backing up in the feed screw

Hits OEE: Performance

Symptoms: Meat builds up in the barrel and does not pass through the plate.

Plate holes blocked
Clean the plate and check for sinew wrapping.
Sinew wrapping round the knife
Use the right knife and plate and clear the wrap.
Feed screw worn
Replace the screw.

Prevention: Plate checked at each product change.

Metal fragments from the cutting set

Hits OEE: Quality

Symptoms: Metal detection finds fragments, or pieces are missing from the knife.

Knife chipped by bone or foreign matter
Inspect the knife at every change and keep the broken piece record.
Knife striking the plate unevenly
Check the knife and plate are flat and matched.
Loose cutting set
Tighten the ring to the maker setting.

Prevention: Knife inspection at each change and metal detection after the grinder.

Stop the same fault coming back

Recurring meat grinder stops usually trace to a cause you cannot see by hand. The partner we recommend is Fabrico: it tracks OEE and downtime live from PLCs, IoT sensors or AI cameras; where cameras are fitted, the video of a stop sits next to its machine data so the cause can be reviewed; and a technician opens the work order from the stop in the same system. Data is hosted in the AWS EU region, and Fabrico and the company behind it hold ISO/IEC 27001, ISO/IEC 20000-1 and ISO 9001.
