Problems on this page:

Uneven slice thickness

Hits OEE: Quality

Symptoms: Slices vary in thickness within a log or from one log to the next.

Product temperature not even
Temper the product to a consistent temperature before slicing.
Feed grippers or belts slipping
Replace worn grippers and clean the feed belts.
Blade dull
Sharpen or replace the blade on a fixed schedule.
Product shape varies
Tighten the forming or log size upstream.

Prevention: Slice thickness checked at the start of each log batch.

Ragged cuts or shredding

Hits OEE: Quality

Symptoms: Cut faces are torn or crumbly instead of clean.

Blade dull or chipped
Sharpen or replace the blade.
Product too warm or too soft
Lower the product temperature to the range the product needs.
Blade speed wrong for the product
Adjust the blade speed.

Prevention: Blade changes logged with run hours.

Product jams in the feed

Hits OEE: Availability

Symptoms: Logs or pieces stop in the feed and need clearing by hand.

Product larger than the feed opening
Check the product size against the machine setting.
Feed belts or rollers worn
Replace worn feed parts.
Sticky product surface
Check the product temperature and surface.

Prevention: Product size checked against the feed setting at changeovers.

Blade wearing or chipping quickly

Hits OEE: Availability

Symptoms: Blades need changing far more often than normal.

Hard inclusions such as bone or frozen cores
Check the product for bone and make sure it is tempered through.
Wrong blade for the product
Ask the maker which blade suits the product.
Blade striking the anvil or shear edge
Reset the blade clearance.

Prevention: Blade life tracked by product.

Portion weights off target

Hits OEE: Quality

Symptoms: Portions are overweight or underweight against the label.

Weight control or vision settings wrong
Check the settings for the product.
Product density changed
Check the product specification and retrain the system.
Slice count per portion wrong
Check the portion setting.

Prevention: Portion weight checked on the checkweigher and reviewed every hour.

Dice not square or cubes breaking

Hits OEE: Quality

Symptoms: Cubes are uneven, joined, or broken.

Circular knife spacing wrong
Set the knife spacers for the cube size.
Cross-cut timing off
Reset the cross-cut knife timing.
Product too soft or too hard
Bring the product to the right temperature.

Prevention: A sample cube check at each start-up.

Product residue after cleaning

Hits OEE: Quality

Symptoms: Swabs or visual checks find product left under guards or in the knife area.

Parts not removed for cleaning
Follow the strip-down list in the cleaning procedure.
Cleaning chemical or temperature wrong
Check the cleaning method with the chemical supplier.
Worn surfaces trapping product
Replace worn or scratched parts.

Prevention: Pre-start hygiene inspection signed off before each run.

Machine stops on a guard interlock

Hits OEE: Availability

Symptoms: The machine stops with a guard or door fault during production.

Guard switch loose or misaligned
Fix the switch and its actuator.
Cleaning water in the switch
Use switches rated for washdown and seal the connectors.
Guard not closing fully
Repair the hinge or catch.

Prevention: Guard switches checked at the weekly PM; interlocks never bypassed.

Slices not shingled or stacked correctly

Hits OEE: Quality

Symptoms: Slices overlap unevenly, fold over, or the stack falls apart before packing.

Discharge belt speed not matched to the slice rate
Set the belt speed for the shingle or stack pattern.
Product too warm and sticky
Bring the product to the slicing temperature.
Interleaver paper feed fault
Check the paper feed and cut where interleaving is used.

Prevention: Pattern checked on the first portions after each changeover.

Stop the same fault coming back

Recurring slicer / dicer stops usually trace to a cause you cannot see by hand. The partner we recommend is Fabrico: it tracks OEE and downtime live from PLCs, IoT sensors or AI cameras; where cameras are fitted, the video of a stop sits next to its machine data so the cause can be reviewed; and a technician opens the work order from the stop in the same system. Data is hosted in the AWS EU region, and Fabrico and the company behind it hold ISO/IEC 27001, ISO/IEC 20000-1 and ISO 9001.
