Problems on this page:
Batter temperature rising too far
Hits OEE: Quality
Symptoms: The meat batter gets too warm during cutting, and the emulsion breaks or fat separates.
Knives dull, so they tear and heat the batter
Sharpen or replace the knife set on the interval set for the hours run; dull knives raise the batter temperature.
Ice or chilled water addition too small or too late
Check the ice addition in the recipe and add it at the step the recipe gives.
Meat loaded warmer than the recipe expects
Check the meat temperature before loading the bowl.
Cutting time too long at high speed
Compare the cutting time and speed with the recipe.
Prevention: Batter end temperature recorded for every batch.
Knives hitting the bowl or each other
Hits OEE: Availability
Symptoms: Knocking noises come from the bowl, or knives are found chipped or bent.
Knife-to-bowl clearance set wrong
Set the clearance with the gauge the maker supplies after every knife change.
Knives mounted in the wrong order or orientation
Mount knives in the order and direction the maker shows.
Knife shaft nut not tightened to torque
Tighten the nut to the maker torque; a loose knife set is a serious hazard.
Bone or frozen block in the bowl
Check the raw material and the frozen block size.
Prevention: Knife clearance checked and recorded at every knife change.
Particle size uneven
Hits OEE: Quality
Symptoms: Coarse products show uneven particles, or emulsions are not fine enough.
Knives worn or sharpened unevenly
Sharpen knives as a balanced set.
Bowl speed and knife speed not matched to the recipe
Check both speeds against the recipe.
Too much or too little product in the bowl
Fill the bowl within the batch size the recipe sets.
Cutting time changed
Compare the cutting time with the recipe.
Prevention: Particle definition checked on samples from each batch.
Vibration or imbalance
Hits OEE: Availability
Symptoms: The machine vibrates strongly at high knife speed.
Knives not balanced as a set
Have the knife set balanced after sharpening.
One knife broken or missing a piece
Inspect every knife and replace damaged ones.
Knife shaft bearing worn
Check the bearings for play and temperature.
Machine feet loose
Check the machine mounting.
Prevention: Vibration checked at each knife change.
Lid or guard interlock faults
Hits OEE: Availability
Symptoms: The knives will not start, or the machine stops when the lid moves.
Lid switch misaligned
Align the lid switch and its actuator so it proves the lid is closed.
Lid seal or hinge worn
Repair the lid hinge and seal so the lid closes fully.
Safety circuit fault
Have the safety circuit tested by qualified staff; never run the knives with the lid open.
Unloader arm not in its home position
Check the unloader home position switch and its target.
Prevention: Interlocks tested weekly.
Vacuum not reached on vacuum cutters
Hits OEE: Quality
Symptoms: The vacuum cutter does not reach its vacuum, and air stays in the batter.
Lid seal leaking
Replace the lid seal and check the sealing face for damage.
Vacuum pump worn or oil contaminated
Check the vacuum pump output and change its oil if it is milky or dark.
Batter carried into the vacuum line
Check and empty the separator before the vacuum pump.
Valve not closing
Check the vacuum and vent valves for product on their seats.
Prevention: Vacuum level recorded per batch.
Unloading slow or incomplete
Hits OEE: Performance
Symptoms: Emptying the bowl takes long, and product remains in it.
Unloader disc worn or set too high
Adjust the unloader disc height or replace a worn disc.
Batter too stiff for the unloader
Check the batter temperature and water addition against the recipe.
Unloader speed set low
Check the unloader speed setting for the product.
Product sticking in the bowl
Check the bowl surface for scratches where product sticks.
Prevention: Unloading time recorded per batch.
Cleaning problems around the knife head
Hits OEE: Availability
Symptoms: Residue stays around the knife shaft and under the lid.
Knife head not dismantled for cleaning
Remove the knives for cleaning with the machine isolated, using cut-resistant gloves.
Cleaning water too cold for fat
Check the cleaning water temperature.
Lid seal not removed for cleaning
Remove and clean the lid seal as the instructions say.
No written cleaning method
Write a cleaning sequence with photos.
Prevention: Swabs taken around the knife head after cleaning.

Stop the same fault coming back
Recurring bowl cutter stops usually trace to a cause you cannot see by hand. The partner we recommend is Fabrico: it tracks OEE and downtime live from PLCs, IoT sensors or AI cameras; where cameras are fitted, the video of a stop sits next to its machine data so the cause can be reviewed; and a technician opens the work order from the stop in the same system. Data is hosted in the AWS EU region, and Fabrico and the company behind it hold ISO/IEC 27001, ISO/IEC 20000-1 and ISO 9001.
