Problems on this page:

Oil temperature unstable or slow to recover

Hits OEE: Quality

Symptoms: The oil temperature drops too far when product enters and takes too long to come back, so colour and moisture vary.

Heat exchanger or burner fouled
Clean the heat exchanger or burner tubes at the interval the maker sets, more often on high-load products.
Thermal oil or oil circulation flow low
Check the pump, strainers and valves in the heating circuit.
Product load above the fryer rating
Match the infeed rate to the heat the fryer can deliver.
Temperature sensor badly placed or drifting
Check the sensor against a reference thermometer and its position in the oil flow.

Prevention: Oil temperature trended against product load so slow recovery is spotted early.

Oil darkening and degrading quickly

Hits OEE: Quality

Symptoms: The oil turns dark, smells, and the product picks up off flavours earlier than usual.

Fines not filtered out
Check the continuous filter and the fines removal system.
Low oil turnover
Keep the fresh oil top-up at the rate the process needs.
Hot spots on heating surfaces
Clean the heating surfaces and check the oil flow across them.
Water, salt or coatings carried in with the product
Drain and dewater product before the fryer and check the coating line.

Prevention: Oil quality measured on a schedule with a test method your quality plan sets.

Oil foaming

Hits OEE: Availability

Symptoms: Foam builds on the oil surface and can overflow or hide the product.

Degraded oil
Replace or refresh the oil.
Cleaning chemical left in the fryer
Rinse and neutralise fully after a boil-out before refilling with oil.
High water content in the product
Dewater the product before frying.
Oil type not suited to the product
Review the oil specification with the supplier.

Prevention: A rinse check after every boil-out before oil goes back in.

Product sticking or clumping

Hits OEE: Quality

Symptoms: Pieces stick together, stick to the belt, or come out in clumps.

Product dropped in too close together
Spread the product evenly across the infeed.
Oil too cool at the entry
Check the oil temperature at the infeed zone.
Submerger belt speed wrong
Set the submerger to hold product under the oil without crowding.
Surface starch or moisture
Rinse and dry the product before the fryer.

Prevention: Infeed spread checked at each start-up.

Uneven colour or cooking

Hits OEE: Quality

Symptoms: Some pieces are pale and others dark, or one side of the belt cooks differently.

Uneven oil flow across the fryer
Check the oil inlets and distribution plates.
Product size varies
Tighten the cut size upstream.
Belt speed varies
Check the drive and its speed control.
Temperature differs along the pan
Check heat input and sensors in each zone.

Prevention: Colour checked across the belt width at each shift.

Conveyor or submerger belt faults

Hits OEE: Availability

Symptoms: The belt runs off line, jumps sprockets, or stalls.

Carbon build-up on sprockets and belt
Clean during the boil-out and check sprocket teeth.
Stretched mesh belt
Measure belt elongation and replace a stretched belt.
Belt tracking out of adjustment
Adjust the take-up evenly on both sides.
Drive overloaded
Check the drive current and free any binding.

Prevention: Belt and sprocket inspection with every boil-out.

Oil filter blocking

Hits OEE: Availability

Symptoms: The filter needs changing more often, oil flow falls, or the pump cavitates.

High fines load from the product
Improve fines removal before the oil reaches the filter.
Filter medium too fine for the load
Check the filter grade with the supplier.
Pump suction restricted
Clean the strainer and check the suction line.

Prevention: Filter changes logged against production volume.

High temperature limit trips

Hits OEE: Availability

Symptoms: The fryer shuts down on the high limit safety device.

Control loop overshooting
Check the controller tuning and the control valve.
Low oil level exposing heating surfaces
Check the level control and top-up system.
High limit sensor faulty
Test the device; never bypass a high limit.

Prevention: High limit and fire suppression system tested on the schedule your safety plan sets.

Guidance only. Always follow lockout/tagout and your site's safe-work procedures, and verify against OEM manuals before acting.

Stop the same fault coming back

Recurring industrial fryer stops usually trace to a cause you cannot see by hand. The partner we recommend is Fabrico: it tracks OEE and downtime live from PLCs, IoT sensors or AI cameras; where cameras are fitted, the video of a stop sits next to its machine data so the cause can be reviewed; and a technician opens the work order from the stop in the same system. Data is hosted in the AWS EU region, and Fabrico and the company behind it hold ISO/IEC 27001, ISO/IEC 20000-1 and ISO 9001.
