Problems on this page:

Shell fragments in the liquid egg

Hits OEE: Quality

Symptoms: Shell pieces are found in the liquid egg after breaking.

Breaking cups or knives out of adjustment
Adjust the breaking heads as the maker specifies and check every head, not just one.
Cracked or dirty eggs fed to the breaker
Check the grading and washing before the breaker.
Filters after the breaker damaged
Inspect the strainers and filters for holes.
Breaking speed too high for the egg quality
Reduce the speed for thin-shelled eggs.

Prevention: Liquid egg checked for shell on samples each hour.

Yolk in the white when separating

Hits OEE: Quality

Symptoms: Separated whites contain traces of yolk, which spoils their whipping performance.

Separator cups worn, bent or dirty
Clean the separator cups and replace bent or worn ones.
Eggs too old or too cold, with weak yolk membranes
Check egg age and temperature at the breaker, and run older eggs as whole egg instead.
Breaking force too high, so yolks break
Adjust the breaking heads so they open the shell without pressing the yolk.
Machine speed too high for the egg quality
Reduce the speed when separating and compare the yolk results.

Prevention: Whites tested for yolk traces on samples each hour.

Low yield of liquid egg

Hits OEE: Performance

Symptoms: Less liquid egg comes out per case than expected, and more is left on the shells.

Breaking heads not opening the shell fully
Adjust the breaking heads so each shell opens cleanly.
Drain time on the cups too short
Check the machine speed against the drain time the egg quality needs.
Eggs too cold, so whites cling to the shell
Bring eggs to the temperature the maker recommends before breaking.
Liquid lost on the shell conveyor
Check the drip trays and the shell conveyor for spill.

Prevention: Liquid egg yield per case recorded per shift.

Feeder jams and broken eggs before the breaker

Hits OEE: Availability

Symptoms: Eggs jam in the loader or transfer and break before they reach the breaking heads.

Loader not synchronised with the breaker
Check the timing between the loader and the breaking heads.
Egg sizes too mixed for the setting
Grade the eggs by size before the breaker, or set the loader for the size range.
Rollers or fingers worn
Replace worn rollers and fingers in the loader.
Sensors dirty with egg
Clean the sensors during the run at a set interval.

Prevention: Jams recorded per shift with their position on the machine.

Hygiene and cleaning problems

Hits OEE: Availability

Symptoms: Egg residue builds up on cups, knives and trays, and hygiene swabs fail.

Cleaning interval too long for the run
Set the cleaning interval for the hours run and the egg volume.
Parts not removed for cleaning
Remove cups and trays as the cleaning instructions say, with the machine isolated.
Water too cold to remove protein and fat
Check the cleaning water temperature.
Detergent not suited to egg soil
Use the detergent approved for protein soils on the machine materials.

Prevention: Swabs taken after each clean.

Liquid egg temperature too high

Hits OEE: Quality

Symptoms: Liquid egg reaches the holding tank warmer than the limit before pasteurising.

Holding tank or plate cooler not cooling enough
Check the chilled water flow and temperature to the cooler.
Liquid egg waiting before it is cooled
Pump liquid egg to cooling straight after breaking.
Room temperature high around the breaker
Check the room cooling in the breaking area.
Temperature sensor drifting
Check the sensor against a reference thermometer.

Prevention: Liquid egg temperature logged at the tank.

Egg washer not cleaning the shells

Hits OEE: Quality

Symptoms: Eggs reach the breaker with dirt still on the shell.

Wash water temperature or detergent wrong
Check the wash water temperature and detergent concentration.
Brushes worn
Replace worn brushes in the washer.
Spray nozzles blocked
Clean the spray nozzles and check the water pressure.
Wash water not changed often enough
Change the wash water at the interval set for the egg volume.

Prevention: Shell cleanliness checked at the breaker infeed each hour.

Shell handling blocking

Hits OEE: Availability

Symptoms: The shell conveyor, crusher or shell centrifuge blocks and stops the breaker.

Shell crusher or conveyor overloaded
Check the conveyor speed against the breaker output.
Shell centrifuge screen blocked
Clean the screen and check its spray.
Waste bin not changed in time
Set a bin change routine for the run rate.
Drive fault on the shell conveyor
Check the motor and its drive for faults.

Prevention: Shell handling stops recorded per shift.

Stop the same fault coming back

Recurring egg breaking machine stops usually trace to a cause you cannot see by hand. The partner we recommend is Fabrico: it tracks OEE and downtime live from PLCs, IoT sensors or AI cameras; where cameras are fitted, the video of a stop sits next to its machine data so the cause can be reviewed; and a technician opens the work order from the stop in the same system. Data is hosted in the AWS EU region, and Fabrico and the company behind it hold ISO/IEC 27001, ISO/IEC 20000-1 and ISO 9001.
