Problems on this page:

Uneven proofing

Hits OEE: Quality

Symptoms: Some products are over-proofed and others under-proofed in the same batch.

Air distribution uneven
Check the fans and the air ducts and clean blocked outlets.
Temperature or humidity differing between zones
Check the sensors and the controls in each zone.
Product spacing uneven
Space trays and products as the design needs.
Dough temperature varying
Control the dough temperature at mixing.

Prevention: Proof checked across positions on test runs.

Condensation dripping on product

Hits OEE: Quality

Symptoms: Water drips onto dough and leaves marks.

Humidity set too high
Lower the humidity setpoint.
Cold spots on walls or ceiling
Check insulation and heaters.
Humidity sensor reading wrong
Calibrate the sensor.
Steam injection too strong
Check the humidifier control.

Prevention: Humidity sensor calibration on the planned schedule.

Dough skinning

Hits OEE: Quality

Symptoms: A dry skin forms on the dough surface.

Humidity too low
Raise the humidity setpoint.
Humidifier fault
Check the humidifier and water supply.
Doors left open
Keep doors closed.
Air speed too high
Reduce the fan speed.

Prevention: Humidity logged during each run.

Temperature not stable

Hits OEE: Quality

Symptoms: The proofer temperature swings during the run.

Heater or valve fault
Check the heating.
Controller tuning
Retune the loop.
Door openings
Reduce door opening time.
Sensor location poor
Move the sensor to a representative point.

Prevention: Temperature trended for each run.

Conveyor or spiral faults

Hits OEE: Availability

Symptoms: The conveyor jams, slips or stops.

Belt or chain worn
Measure wear and replace.
Product build-up on the belt
Clean the belt.
Tension wrong
Adjust the tension.
Drive overload
Check the drive.

Prevention: Conveyor checks at the weekly PM.

Drains blocked

Hits OEE: Availability

Symptoms: Water pools on the floor of the proofer.

Dough or debris in the drain
Clean the drains.
Drain trap dry or blocked
Check the trap.
Floor slope damaged
Repair the floor.
Humidifier overflowing
Check the humidifier level control.

Prevention: Drains cleaned on the cleaning schedule.

Mould growth inside the proofer

Hits OEE: Quality

Symptoms: Mould is found on walls, ducts or fans.

Warm humid conditions with poor cleaning
Clean and sanitise on a fixed schedule.
Ducts not reachable
Fit access points for cleaning.
Proofer left closed and humid when idle
Dry the proofer out after production.
Condensation spots
Fix the cold spots.

Prevention: Environmental swabs at the frequency your plan sets.

Proof time wrong for the product

Hits OEE: Quality

Symptoms: Products leave the proofer under or over proofed.

Line speed not matched to the recipe
Set the speed or dwell for the product.
Dough temperature off
Control the dough temperature.
Yeast or recipe changed
Check the recipe.
Set points not changed at product change
Link the proofer settings to the product.

Prevention: Proof settings recorded per product.

Humidifier faults

Hits OEE: Availability

Symptoms: The humidifier stops, alarms, or cannot keep up during production.

Scale on the humidifier
Descale the humidifier and treat the water so minerals do not build up on the elements or nozzles.
Water supply valve or level control fault
Check the supply valve and the level control on the reservoir.
Nozzles blocked on spray systems
Clean the nozzles and check the water filter in front of them.
Heater element failed on steam humidifiers
Check the elements and their contactor.

Prevention: Humidifier cleaning on the planned schedule.

Product collapsing after proofing

Hits OEE: Quality

Symptoms: Dough rises in the proofer but falls when it moves to the oven.

Over-proofing from a long dwell
Shorten the dwell time or lower the temperature for that product.
Rough transfer between proofer and oven
Check the transfer points so trays and dough are not knocked.
Proofer too hot for the dough
Check the temperature against the recipe.
Dough weak from the mixing step
Check the mixing time and dough temperature with the bakery team.

Prevention: Proof height checked before the oven on new products.

Stop the same fault coming back

Recurring proofer stops usually trace to a cause you cannot see by hand. The partner we recommend is Fabrico: it tracks OEE and downtime live from PLCs, IoT sensors or AI cameras; where cameras are fitted, the video of a stop sits next to its machine data so the cause can be reviewed; and a technician opens the work order from the stop in the same system. Data is hosted in the AWS EU region, and Fabrico and the company behind it hold ISO/IEC 27001, ISO/IEC 20000-1 and ISO 9001.
